What to Eat Wednesday (When You’re Vegan and on a Budget): A Lazy Meal

My Name is Franny and I’m 25 years old! I live in Indiana and I am the Tour Coordinator for a Non-Profit Charity called Feed Our Children NOW!  I enjoy the simple things in life such as family time, reading, drawing, self expression, feminism and toy collecting. I collect everything from Star Wars action figures to the grotesque but loveable Living Dead Dolls and everything in between.  To my friends I’m just Franny but to most people I’m that weird guy because I’m vegan. Being vegan doesn’t mean you have to eat like a rabbit. I eat everything from Hamburgers to Cheese Enchiladas! I’m Mexican; you can’t expect me to stop eating enchiladas just because I’m vegan! For those of you who don’t know what vegan means: veg·an/ˈvēgən/ Noun: A person who does not eat or use animal products. Eating vegan means eating healthier without all the calories and fat. It’s also a way to reduce high cholesterol, avoid diabetes and decrease your chances of heart disease and cancer!  Which is why I’m here to teach you a fun and easy way to cook vegan while on a budget with todays fabulous segment of What To Eat Wednesday (When You’re Vegan and on a Budget): A Lazy Meal! 

What to Eat Wednesday (When You're Vegan and on a Budget): A Lazy Meal

Do you ever get hungry and suddenly feel too lazy to cook a meal or don’t want leave the house because you would rather sit around in your Nana’s hand knitted jammies that you got for Christmas years ago? I know I get like that sometimes, especially when it’s cloudy and cold out. I do a lot of traveling and often miss my favorite shows during their original airdate and have to catch up whenever I can. Yesterday I found myself in bed with tons of pillows and blankets and my windows wide open while watching my favorite teen drama and wanted a SERIOUS bowl of soup, but refused to eat anything that came from a can.  I suddenly remembered that I had an awesome recipe for Black Bean Bisque and found myself in my kitchen in my knitted jammies and oversized hoodie ready to cook. This meal is pretty simple and easy to make. Its takes no effort and there is no way you could mess it up! At my house we eat a lot of beans. They’re great in almost anything and are a great source of Fiber, Protein and Vitamin B. If you didn’t know, beans take a long time to cook, which is why I always cook a few days worth ahead of time and store them in the fridge until ready to use. Cooking beans is simple, for every cup of beans you need 2 cups of boiling water!  I usually make 4 cups of beans with 8 cups of water; add salt for taste and a large diced onion. Once you have your beans you’ll need: 2 tablespoons olive oil 1 large onion-chopped medium fine 4 cloves garlic- chopped fine
2 fresh jalapenos- seeded and diced 1 diced tomatoes
2 cups of vegetable broth 2 teaspoons ground cumin 1-teaspoon cayenne pepper 1/2-teaspoon black pepper
1-tablespoon chili powder 2 cups of already cooked black beans
Salt to taste Directions: Place oil in a large pot. Over medium heat, sauté the onions and garlic until softened, about 5-6 minutes. Once that’s done toss in all the remaining ingredients and bring soup to a boil. Cover and simmer for about 10-15 minutes. With a large ladle or cup, pour one half of the hot soup into a blender. Puree until smooth and then add the pureed soup back into the pot with the remaining unblended soup and give a few more minutes to boil again. That’s its.  You’re done.
Serve warm and enjoy! If you’re feeling up to it you could even serve it in a bread bowl! I had recently gone to Whole Foods and bought a wonderful loaf of sourdough bread and used that to eat my soup. Before pouring the soup into the bread I cut a circle out of the top of the bread and put a little olive oil all around the bread and popped it into the oven for 10 minutes at 350 degrees to give it a nice brown and flaky outside. It was delicious! I would eat this everyday if I could. Before I went back to my room to catch up on the lives of my favorite teen drama characters, I made a quick smoothie since my blender was already out and ready to use. What you need: 1 cup of strawberries 1 whole banana 1 ½ cups of your favorite non dairy milk / soymilk. A few squeezes of Agave to sweeten the smoothie Directions: blend all ingredients in the blender until smooth and enjoy! Easy as that! There you have it! Another easy and affordable meal perfect for those lazy and cold days when all you want to do is lay around and watch TV.  Now its time to kick back in your jammies and enjoy the wonders of being vegan.
