Sticky Date Caramel Pudding

Heather and Jenny  here, back with our last and final healthy summer vegan recipe for a an yummy Sticky Date Caramel Pudding! This dessert is like a 1:2 punch! It has a date caramel which is rich and delish but pure and natural, and it also has a rich tasting, but super low fat pudding base. This means you can eat this pudding without the guilt of other desserts, and it is fast to whip up. We use some ingredients that may seem funky, like kuzu powder to thicken the pudding, but trust us, it’s worth it! Kuzu is a root that us super good for the tum, and if you have hyperactive kids, or you’re feeling stressed – kuzu can help chill you out. Hope you're having a wonderful summer! - Heather and Jenny Stick Date Caramel Pudding Serves 4 INGREDIENTS Caramel Ingredients 1 tablespoon virgin coconut oil 3 tablespoons maple syrup 6-8 large dates, roughly chopped Dash sea salt ½ teaspoon ground Ceylon cinnamon 2 tablespoons almond or soymilk Pudding Ingredients 2 cups original almond or soymilk (un-sweetened) 2 tablespoons maple sugar or evaporated cane sugar 3 tablespoons kuzu, plus 3 tablespoons almond or soymilk 1 vanilla bean ½ teaspoon ground Ceylon cinnamon Dash sea salt 2 tablespoons arrowroot powder, plus 2 tablespoons almond or soymilk DIRECTIONS In a small sauté pan, add coconut oil and maple syrup. Heat over medium-low heat and bring to a simmer. Add dates, sea salt, and cinnamon. Cook for about 2-3 minutes, or until mixture looks caramelized. Place in food processor and add almond or soymilk. Blend until smooth and creamy. Set aside. Meanwhile, in a large pot over a medium flame, add 2 cups almond or soymilk. Add sugar to dissolve. Stir.
